Cangshan X Series 59137 Steel Forged Chef’s Knife Review

I do much cooking at home on daily basis due to which it is impossible for me to compromise with knife quality. My kitchen is commercial wherein I always prefer something with more of an edge than the blade. Although this is my first priority, I also prefer a knife that can cut not only smooth items but also harder ones such as onions and frozen tofu in a matter of minutes. I really have bad time in cutting onions and experiencing burning eyes at the same time.

Well, the Cangshan X series 59137 Chef’s knife proved itself well on all of the aforementioned critical criteria. Nor did it help me in chopping onions easily in just a few seconds but also in cutting fruits and other veggies like butter, including lettuce, celery, green pepper, cabbage, radish, and tomato without smoosh.

The most surprising thing is that this knife can give very thin slices, which is something that a lower quality knife cannot offer. The overall cut is clean and smooth, which is much like splitting ice-cream with the help of a warm knife. With the well balanced weight and more edge that is longer lasting, you can easily and quickly dice, slice, and chop.

Blade Forged from Ultimate Quality Steel

Cangshan is popular for its longer lasting knives for commercial or heavy use. The credit for this ability goes to the German sourced X50CrMoV15 steel. Well, this is no ordinary steel but highly endorsed high-alloy steel known to hone quickly for staying sharp and hold the edge for longer period than expected.

This German steel holds 8-inch long, forged, full-tang blade reflecting superb craftsmanship. It delivers a perfect balance of edge retention, hardness, and lasting functionality. For this balance, the overall weight is well distributed between the handle to cut through thick stuff and blade for easier chopping and rocking.

The Ergonomic Handle

The handle fits and holds comfortably in your hand while at work. The side view is deceptive as it appears that the handle is tapering far from the blade such that it shall glide out of your palm. However, the top view makes the handle appear larger at the end far from the blade and delivers an optimal grip. However, the grip is not that wider and will take time getting used to, if you are used to such a grip. This is only some few hours. The handle is easy to control as well as is well balanced to keep tilting or leaning at bay.

National Sanitation Foundation (NSF) Certification

Well, this means that the knife is in accordance with the safety, quality, and performance standards.

Customer Reviews and Scores

At the time of writing, I came across 65 customer reviews, which together formed an overall rating of 4.8 stars. Up to your surprise, 92% of these reviewers were fully happy with this knife by giving five stars. They disclosed some of the most wanted pros as well: Sturdy and elegant packing, gorgeous look, easy handling, good grip, razor sharp, clean and smooth cut, great balance, affordable, ultimate steel quality, heavy-duty construction but still not heavy, no slipping, ergonomic handle, and lasting edge retention.

However, a few reviews have pointed out some trivial cons or limitations such as bit smaller for commercial purpose, not so comfy for non-stop work, lacks sheath, and skinny handle but with good grip. Nevertheless, these cons do not obstruct others from buying this knife. Here are some customer reviews worth reading:
