I love Henkel knives but they are certainly out of my budget, even though I am working as an entry level cook at a good restaurant. For me, knife skills are a necessity for the demanding job, for earning on the move. While I always need a 10-inch knife, this Cangshan proved to be quite handy for prepping small items in close stations. For instance, it has become easy to maneuver with this small Santoku while working for orders at my own pantry.

Let me admit that I was skeptical about this knife initially, as I only brought it due to its low price tag and excellent reviews. What made me skeptic was its low price for superb Japanese characteristics and high quality German steel. However, I am happy that I did listen to the reviews and brought this Santoku extremely sharp right out of the box.

While the price is cheap, the quality is not. Right from packaging to performance, the quality is matchless. As per my experience, the knife is also ideal for home use as well. The packaging is quite fancy and that its small box looks pretty.

Blade Forged from Highest Quality Steel

Cangshan knives are designed for commercial or heavy duty use, usually. This Santoku is just one such knife with longer lasting sharpness. It features the German X50CrMoV15 steel, a time tested high alloy form that retains it edge for long and hones quickly for staying sharp.

The sharpness is such that slicing through a lime happens as if it is butter. This knife has been sharpened by hand to deliver an Asian style edge. The forged, full-tang blade reflects excellent craftsmanship by ensuring hardness, edge retention, and lasting performance for years.

The Ergonomic Handle

The handle is a bit squarish, which is what I feel, is best for easy, good grip. The weight is good but it is not balanced, which actually does not matter. The way the handle pushes the knife’s balance farther down the edge is much commendable than a normal knife. This ensures a highly efficient cutting experience. Nevertheless, the fit and hold of this handle while at work is comfortable. It is also easy to control the handle.

Surprisingly, 93% of these reviewers fully favored this knife by giving five stars and revealing some most wanted pros: ergonomic handle staying out of the way with good grip, incredibly sharp, good cutting motion, nice packaging, lightweight, good aesthetics, superb balance, and great price.

No knife seemed to be that decent as well as affordable as this Cangshan knife during my last 5 years of cooking time. With this Santoku, even you are bound to get the most versatile Santoku at the most competitive price. The razor sharp edge and supreme quality steel are simply terrific, while the size, shape, and weight are just ideal. Thus, this Santoku has the perfect balance of aesthetics and functionality.

Whether you are preparing vegetables or a spear for facing a zombie catastrophe, this strongly designed extremely sharp Santoku is all that you need for reliance. You can dice, slice, cut, and chop anything in your own way, no matter how hard that item is. Although this is a Chinese build, there is nothing to doubt its quality and functionality.
