Sharp, Thin Blade

The blade is extremely sharp, thin and long to make cutting fish, seafood and rice rolls a breeze. The fact that this blade is razor sharp really makes cutting through raw seafood much easier than with a duller or thicker blade. The thinness of the blade also assists in getting the cuts where you really want them. It is really nice when you have a knife that is meant and used for a specific task. It makes the whole experience more enjoyable and helps you and your other knives not have to work as hard.

Single Bevel

The single bevel on this knife comes from a Japanese tradition. It is made for a right handed person, so if you are left handed and you want a similar knife, you will have to spend a lot more money on a higher quality knife that has a left handed single bevel. However, this is a great choice for those of you who are right handed and don’t want to spend hundreds of dollars on a sashimi knife. The single bevel of the knife is great because it ensures a precise cut, which is important when preparing raw fish.

Additionally, the fact that this knife has a single bevel also means that it is much easier to sharpen since you only sharpen one side. In order to sharpen this knife, you must use a damp whetstone and only on a flat surface.

Intended for Sashimi and Seafood

As previously stated, this knife is intended for use while preparing sashimi, sushi, rice rolls and essentially any raw seafood. It works best when used for its stated purpose. The company that makes this knife also has a variety of other types of knives that are meant for a variety of different tasks. If you want a knife for something other than cutting raw seafood, you may want to check out those other varieties. However, if you are simply looking to use this knife for its intended purpose, this may be a good choice. It’s non-serrated knife blade is perfect for slicing through raw fish.

There are 179 reviews on Amazon for this sashimi knife. It garners a total of 4.3 out of 5 stars as far a ratings go. The large majority—81 percent—have given this knife a positive rating, either 4 or 5 stars. Since the price is so low for this knife–$13.50 currently—I can’t imagine that anyone is really expecting too much from this kitchen knife. Here are a few reviews so you can get an idea of what customers are saying about the craftsmanship and performance of this knife.

  • I do recommend that you learn how to use this knife, it is NOT for chopping and dicing, but it is cut for slicing off sashimi with very little resistance. Not a heavy knife, but then again it’s not $300 either. I love it.

  • I use this to cut fish and it’s very sharp. Obviously at this price point you won’t get something like those in sushi bars, but for what it is — it’s a great knife for those who want to occasionally make sushi or nigiri at home.

  • These are easy to keep sharp and easy to keep clean. They cut well. Single bevel take some getting use to but adds to its ability to be easily sharpened, Even by a beginner. It lacks the weight I like in a knife. That’s the only reason it’s a 4 instead of 5 star.
